Mặc dù những món ăn này có mùi khó ngửi nhưng hương vị của chúng hoàn toàn trái ngược, thậm chí được nhiều người đánh giá là rất ngon.


1. Đậu phụ thối

Khi nói đến thực phẩm có mùi hôi ở Trung Quốc, chắc chắn nhiều người nghĩ ngay đến món đậu phụ thối đầu tiên. Mùi thối của món ăn này là do protein trong đậu phụ bị phân hủy dưới tác động của các vi sinh vật.



Điểm nổi bật nhất của món đậu phụ thối là nó có vẻ ngoài cháy đen, mùi hôi rất nồng. Đối với những người chưa từng ăn món này, có lẽ họ sẽ không thích nó. Tuy nhiên, tại Trung Quốc người dân rất thích món này, họ nói rằng mùi vị của đậu phụ thối rất đặc biệt, rất ngon nếu ăn kèm với một số loại nước sốt.

2. Đậu phụ lên men

Món ăn này còn có một cái tên rất sang chảnh “phô mai phương Đông”. Thực chất đây là món ăn làm từ đậu phụ, nó được cắt nhỏ thành từng miếng, ướp muối trong lọ kín. Sau vài ngày, miếng đậu phụ sẽ chuyển sang màu xanh lá cây, có mùi hôi nhưng lại có vị rất ngon.



Tương truyền, đậu phụ lên men được đưa vào hoàng cung và trở thành món ăn yêu thích hằng ngày của Từ Hy Thái Hậu.

3. Váng đậu

Váng đậu này từng là món ăn của trong triều đình Trung Quốc, nó cũng là đặc sản nổi tiếng ở thị trấn Songxia, Shangyu, thành phố Thiệu Hưng. Nó có hương vị độc đáo, có thể được chiên hoặc hấp.


Lý do khiến váng đậu có mùi là do các thành phần protein bên trong đậu nành bị phân hủy để tạo thành axit amin, dưới tác dụng của enzyme protease trong quá trình lên men. Mùi thực khách ngửi được thực sự là mùi của axit amin. Mặc dù các axit amin không có mùi thơm, nhưng chúng có vị rất ngon.

4. Thân cây rau dền

Mùi của đậu phụ thối vẫn chưa bằng với mùi thân cây rau đền ngâm muối. Món ăn này đặc biệt được người dân địa phương ở Thiệu Hưng, Thái Châu, Ninh Ba và các nơi khác ở miền Nam Trung Quốc yêu thích. Thế nhưng, món này thực sự ngon xuất sắc thì chỉ có người ở Chiết Giang mới biết cách làm.

Quy trình của món này là người ta sẽ chặt thân cây rau dền già và cứng, rồi sau đó ngâm trong nước muối. Sau vài ngày, thân cây có mùi hôi là đã có thể ăn được.

5. Đậu phụ lông

Đậu phụ lông còn được gọi là đậu phụ nhẹ, một món ăn nổi tiếng ở Huệ Châu. Món ăn này có nhiều lông trắng trên bề mặt đậu phụ.

Sau khi đậu phụ được cắt thành từng miếng, nó được ủ lên men trong rơm rạ đến khi mọc lông tơ trên bề mặt. Cách ăn món này cũng rất đơn giản, đa số mọi người sẽ thích chiên vàng, nướng hoặc hấp.

6. Cá thối



Món cá thối là đặc sản của người An Huy. Phương pháp ăn này có lịch sử hơn 200 năm tại địa phương. Cá được ngâm với nước muối trong 6 – 7 ngày, sau khi lên men nó bắt đầu tạo ra mùi hôi. Mặc dù món ăn này chứa nhiều protein, vị không tệ, nhưng nếu là người đầu tiên ăn thì chắc chắn họ sẽ không dám dùng đũa. Hầu hết mọi người nghĩ rằng món cá bị hỏng, nhưng khi đã lỡ ăn rồi thì sẽ bị nghiện.

7. Nước ép đậu


Nước ép đậu từng là bữa ăn trong hoàng cung. Người ta sau khi nghiền đậu xanh để lấy tinh bột thì phần xác còn lại sẽ được dùng để lên men. Bây giờ món ăn này lại trở thành bữa sáng ở Bắc Kinh. Một bát nước ép đậu nóng hổi đầy đủ dinh dưỡng được rất nhiều người yêu thích. Tuy nhiên, người nước ngoài không thích món này bởi nó có mùi chua rất mạnh.

8. Bún ốc

Bún ốc có mùi cực kỳ khó chịu mặc dù vè ngoài của nó rất hấp dẫn. Mùi hôi này là do măng chua. Măng sau khi lên men sẽ tạo ra mùi chua nồng, khi đun nóng vị chua càng trở nên đậm đặc hơn. Mặc dù có mùi khó ngửi, nhưng nó có vị chua rất sảng khoái, khi được nấu cùng với bún và ốc sẽ tạo ra một món ăn rất ngon.

VN mình cũng có nhiều món thúi đâu thua ai haha. Mắm, khô (nhất là khô cá lăn, OMG, chiên ở ngoài mà còn không chịu nỗi), etc...

Tui nghe người ta nói, cá da trơn mà nấu với gừng thì cũng có mùi thơm nồng nàn lắm.

Mình không rành về cá lắm. Ở nhà làm thì mình ăn thôi chứ chưa bao giờ nấu mấy món cá.
