Old  Default Gỏi cuốn tôm thịt, thơm mát ngày nóng
Thời tiết nắng nóng, oi bức rất khó ăn. Gỏi cuốn tôm thịt đủ chất lại ngon và thơm mát qua những ngày hè.



Nguyên liệu làm gỏi cuốn tôm thịt:



Tôm (chọn loại tôm vừa và tươi ngon)

Thịt ba chỉ hoặc thịt chân gị

Cà rốt

Dưa chuột

Trứng gà

Bột ngô

Bánh tráng

Cây hẹ

Xà lách và rau thơm các loại,giá đỗ.

100gr gị lụa hoặc gị ḅ

300gr bún sợi

Bạn nào thích ăn chua một chút cho thêm dứa.

Cách làm gỏi cuốn tôm thịt:

Thịt ba chỉ hoặc chân gị rửa sach, luộc chín vớt ra một bát nước đá để thịt trắng hơn.

Tôm luộc chín (cách luộc tôm đỏ và ngọt:với 1 kg tôm cho 1/2 bát nước+1/3 bát dấm+2 th́a cà phê muối), tôm luộc chín vớt ra một cái bát nước có thả vài viên đá để tôm được chắc thịt, tôm lột vỏ,con to chẻ làm đôi, con nhỏ để cả con.

Cà rốt thái sợi.

Dưa chuột thái sợi.

Gị lụa thái sợi.

Đập trứng gà ra bát đánh tan cho thêm chút nước mắm hoặc bột canh. Các bạn muốn tráng trứng thật mỏng để thái sợi th́ dùng chảo chống dính,lau qua chảo bằng một lớp dầu ăn mỏng. Lấy một bát nhỏ cho nước đun sôi để nguội vào,khoảng 1/3 bát nhỏ,sau đó hoà 1/2 th́a canh bột ngô vào,hoà tan bột rồi đổ vào bát trứng đă đáng tan,trộn đều dùng muôi múc ra chảo láng đều đậy vung khoảng 1-2 phút rồi dùng th́a lách đều xung quanh viền trứng, úp ngược chảo ra đĩa to để trứng rơi xuống giống như ḿnh làm bánh cuốn tráng chảo.

Cứ làm như vậy thành nhiều lớp cho đến hết trứng, để nguội cắt đôi rồi thái sợi. Hoặc không muốn cầu ḱ đẹp mắt cứ rán b́nh thường như rán trứng ăn sau đó cắt sợi.

Cho chút nước vào bánh tráng,chú ư cho đều nhất ở các mép của bánh tráng, dùng khăn ẩm sạch lau toàn bộ bánh tráng.

Xếp lần lượt rau xà lách, dưa chuột, cà rốt, trứng, thịt, rau thơm...tôm để phần thịt đỏ xuống dưới cho đẹp mắt, thêm nhánh hẹ và cuộn(cách cuộn mọi người xem h́nh bên dưới).

Món này ḿnh chấm mắm nêm hoặc nước mắm chua ngọt.

Cách làm nước mắm chua ngọt: pha một th́a nước mắm+1-1,5 th́a đường+ 1 th́a dấm (hoặc chanh,quất)+4-5 th́a nước.Hoà nước lọc với đường cho tan hết,sau đó cho nước mắm và dấm(hoặc chanh,quất).Tỏi ớt băm thật nhỏ rồi cho sau cùng để tỏi,ớt nổi lên trên.

Cách làm nước chấm mắm nêm (ḿnh dùng mắm nêm D́ Cẩn mua tại Đà Nẵng, nếu không có mắm nêm các bạn vào siêu thị mua một chai tương đen dùng để chấm gỏi th́ cách pha cũng giống với cách pha mắm nêm nhé):

Một nửa quả dứa chín vắt lấy nước cốt (vắt được khoảng 150ml).

Đặt chảo lên bếp cho 1 th́a dầu ăn vào,dầu sôi cho 1/2 th́a ớt bột,hai th́a cà phê hành tím băm nhỏ,1 th́a cà phê tỏi băm đảo nhanh sau đó đổ nước cốt dứa và 100ml nước mắm nêm,đợi mắm sôi cho thêm 1 th́a đường,1 th́a bột nêm,nêm nếm vừa ăn(dứa ngọt cho ít đường,c̣n dứa chua cho thêm đường).

Mắm sôi lại th́ tắt bếp,để nguội cho thêm ớt băm.

Hmm, gỏi cuốn mà bỏ trứng chiên xắt nhỏ bỏ vô?? H́nh như là ḅ bía mới có trứng chiên. Hơn nữa, trong h́nh ở trên, các gỏi cuốn đă làm rồi đâu có thấy tí ti màu vàng của trứng đâu?

Cái của anh Tờ nói là ḅ bía, Tí thích món này. Món ḅ bía rất ngon. Hôm nào Tí làm xong sẽ mời anh Tờ.

Um hen, anh hai nói em mới để ư. Có khi nào họ bỏ thêm cho có chút vị khác nhau, hay là mỗi miền làm khác? Em không dùng chả lụa hay trứng, chắc cách này khác với miền nam làm huh anh Hai? Em chỉ dùng trứng và lạc xưởng khi em làm ḅ Bía thôi.
